Watermelon Salad

Just as the heat wave rolled in, our watermelons were ready to be picked—all at once… Cubed with feta, basil, mint, and a balsamic vinaigrette is the perfect beat-the-heat summer salad.

  • What beautiful colors, and I love anything with basil or mint! For some reason, it reminds me of a great hot weather cocktail I love ~ Gin Basil Smash. I have major garden envy ~ would love to see photos!

  • Delicious! Thank you for the culinary idea for my end-of-summer get together.

  • The best combination is green apple and watermelon. Try watermelon and green apples sliced into batons, with cilantro and mint leaves, served with a lemongrass and lime dressing courtesy of Ottolenghi. You don’t even need to make the dressing for a simple weeknight, or add the teaspoon of black mustard seed for aesthetics, just squeeze a lime over the top for a refreshing version.

  • Add some red onions, and cherry tomatoes, too. Yum! Summer on a plate!! I have been making this all summer as a side dish for white bean tuna salad—-
